Horse mackerel, also called saurel or scad, lives in the waters of the North Atlantic (anywhere from Senegal to Iceland), in the South Pacific, the Mediterranean and the Black Sea.

It is traditionally considered a very humble species, but is the main attraction in all kinds of cooking, through dishes such as escabeche, grilled, baked or fried or as an ingredient in the most exceptional preserves.

Its dark meat, characteristic flavour, reasonable price and high Omega-3 content make horse mackerel an essential fish for the shopping basket. Even so, we still have to be careful with the bones.
