1 galia melon

1 packet fresh mint or red fruits

50 g icing sugar

50 g white sugar

1 tub of mascarpone cheese



Peel the melon, cut lengthways in fine slices and set aside.

Mix the mascarpone cheese with the icing sugar, lay out the melon slices on the worktop, and fill them with the cheese mixture to make cannelloni tubes.

Sprinkle the cannelloni tubes with white sugar and caramelise using a kitchen blow torch.

The cannelloni can be accompanied by fresh mint leaves or red fruit.
