There is a truly great affinity between game and full-bodied fine, strong red reserva and gran reserva wines. The same thing goes for aged Moriles and Jerez amontillado wines.
A perfect wine for serving with quail would be medium-bodied semi-aged reds with not too high an alcohol content. Wines with these characteristics are produced in regions such as A Ribeira Sacra, El Bierzo, Cigales, Arribes del Duero and Madrid. Another good pairing would be the pale generoso fortified wines from Huelva, or the still quite young amontillados from Montilla-Moriles and Jerez. For partridge, serve red reserva wines.
